This was my first experience making spaghetti squash and I was surprised how delicious it turned out!!
Personally I am not a big fan of the chicken, sun-dried tomato mixture with the squash but my tastes tend towards more spicy things with lots of flavor. I did try some Parmesan/spinach marinara sauce on the squash and I absolutely loved it!! I ate almost the entire squash in just one day!! yum yum!

Spaghetti squash is a great alternative to pasta. It is especially for diabetics or those who want to go on a low-carb diets. Squash is much lower in calories and yet has valuable nutrients like vitamin c, a, niacin, and high in dietary fiber. It is also very high in water content.
These are the facts about spaghetti squash, but do not completely forget about pastas specifically whole wheat pasta. Pasta has protein, and folate which is important for the growth of new cells.
Also, a new regular favorite of mine is Avocado and Tomato Grilled Cheese. This is so easy and quick to make and you cannot really go wrong. Avocado is the power-food in this meal. They contain essential nutrients like fiber, potassium, vitamin e, b, and folic acid. Also it helps the body absorb more fat-soluble nutrients like beta-carotene and lutein that is important for eye health.
Well that is what has been cooking in my kitchen lately. Now I am off to do some more reading for my International Business class.
